Peach Cobbler – A Family Favorite

It was my mom’s birthday yesterday and she requested this delicious peach cobbler recipe instead of a traditional birthday cake. It’s a family favorite around here! You could also make this with other fruit (like apples) but the peach is my favorite.

This tastes delicious both warm or cold. If serving warm, you may also want to serve it with scoops of vanilla ice cream.

This could be served warm with scoops of vanilla ice cream.
Ingredients
  • ⅓ cup sugar
  • 1 tablespoon cornstarch
  • ½ teaspoon ground cinnamon
  • 3 cans (398ml each) sliced peaches in juice
  • Topping:
  • 1 cup all-purpose flour
  • ⅓ cup plus 2 tablespoons sugar (divided)
  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • ¼ cup cold butter
  • ½ cup milk
Instructions
  1. Preheat oven to 375F.
  2. In a large bowl, combine sugar, cornstarch and cinnamon.
  3. Add peaches (with about half the juice from the cans) and toss well to coat.
  4. Spray 9x13 baking dish with cooking spray.
  5. Pour peach mixture into baking dish.
  6. For the topping, combine the flour, ⅓ cup sugar, baking powder and salt in a bowl.
  7. Cut in the butter until the mixture resembles crumbs.
  8. Stir in milk until moistened.
  9. Drop topping (by spoonfuls) on top of the peach mixture.
  10. Sprinkle remaining sugar on top.
  11. Bake for 30-35 minutes or until toothpick inserted into topping comes out clean.
