Peach Cobbler

- ⅓ cup sugar
- 1 tablespoon cornstarch
- ½ teaspoon ground cinnamon
- 3 cans (398ml each) sliced peaches in juice
- Topping:
- 1 cup all-purpose flour
- ⅓ cup plus 2 tablespoons sugar (divided)
- 1.5 teaspoons baking powder
- ¼ teaspoon salt
- ¼ cup cold butter
- ½ cup milk
- Preheat oven to 375F.
- In a large bowl, combine sugar, cornstarch and cinnamon.
- Add peaches (with about half the juice from the cans) and toss well to coat.
- Spray 9x13 baking dish with cooking spray.
- Pour peach mixture into baking dish.
- For the topping, combine the flour, ⅓ cup sugar, baking powder and salt in a bowl.
- Cut in the butter until the mixture resembles crumbs.
- Stir in milk until moistened.
- Drop topping (by spoonfuls) on top of the peach mixture.
- Sprinkle remaining sugar on top.
- Bake for 30-35 minutes or until toothpick inserted into topping comes out clean.
