It may be spring but Mother Nature must have missed the memo because it is still snowing here! We’re eager to get back out to the playground while enjoying warmer weather but it sounds like we’ll be waiting a few more weeks…at least! I was dreaming of warmer weather as I was putting together this Cookie Dough Ice Cream Cake. This would be perfect for a summer party, a treat to enjoy on the patio with your family or even just to hide in your freezer to enjoy after the kids go to sleep.

Cookie Dough Ice Cream Cake Recipe:

I wanted this ice cream cake to be delicious while still being easy to prepare so I started with a small tub of vanilla ice cream. No, I didn’t make the ice cream from scratch. Ain’t nobody got time for that! {wink} I used the same recipe for the cookie dough as I use in my delicious Cookie Dough Truffles but I cut the recipe in half and took out the chocolate coating.

A delicious summer treat but eat it fast before it melts!
Ingredients
  • vanilla ice cream (how much depends on the size of cake you want to make but start with approximately one litre)
  • ¼ cup unsalted butter, softened
  • 6 tablespoons firmly packed brown sugar
  • ½ teaspoon vanilla
  • 1 cups flour
  • ½ can (7 ounces) sweetened condensed milk
  • ½ cup semi-sweet mini chocolate chips
  • jar of prepared chocolate icing
Instructions
  1. In a large bowl, cream butter & brown sugar with an electric mixer at medium speed until the mixture is creamy.
  2. Add vanilla and beat until mixed.
  3. Gradually beat in flour and milk.
  4. Stir in chocolate chips and mix well.
  5. Shape some dough into 6 small cookie dough balls (.25 inch) and press the remainder of the cookie dough into an 8-inch springform pan.
  6. Put the cookie dough balls on wax paper in the fridge (you'll put these on the cake right before serving).
  7. Take ice cream out of freezer and let melt slightly so you can scoop it then spread it evenly over the cookie dough base in your springform pan.
  8. Put the cake in the freezer overnight.
  9. Before serving, pop the cake out of the springform pan and add chocolate icing near the bottom of the cake. Put the cookie dough balls on the top of the cake around the edge.
