This Strawberry Banana Bread makes a great breakfast treat or afternoon coffee break snack. I tried a couple of different versions before sharing the recipe with you here – one with just strawberries and one with strawberries plus strawberry jam. The one with strawberry jam (the recipe I’m sharing with you below) has more strawberry flavor so that’s the winning recipe to me! My son is a banana bread eating machine so I was lucky to get some pictures before his little fingers snuck in to grab handfuls of banana bread when I wasn’t looking. The little stinker. {wink}
Strawberry Banana Bread Recipe:
The crumble topping on this Strawberry Banana Bread is optional but I’d highly recommend it.
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 3 eggs
- 3 bananas, mashed
- 1 cup strawberry jam
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup milk
- 2 cups strawberries, chopped
- Topping (optional):
- 2 tablespoons butter, softened
- 4 tablespoons all-purpose flour
- 4 tablespoons brown sugar
- 1 teaspoon cinnamon
- Preheat oven to 350F.
- Grease two loaf pans.
- Beat butter and sugar at medium speed until light and fluffy.
- Add eggs and vanilla and beat until well mixed.
- Add mashed banana and strawberry jam and beat until well mixed (about 30 seconds).
- In a separate bowl, combine flour, baking soda, baking powder and salt.
- Alternate adding the flour mixture and milk to the banana mixture. Beat until well mixed.
- Stir in strawberries.
- Pour batter into loaf pans.
- For the topping, mix all four ingredients together then sprinkle over banana bread batter before baking.
- Bake for 50-60 minutes or until toothpick inserted in the middle comes out clean.
