When it comes to foods I can’t resist, coconut is near the top of my list. Raisins will always be number one but coconut is a close second. This Tropical Banana Bread is loaded with bananas and pineapple then topped with a yummy pineapple frosting and toasted coconut. Is this a breakfast food or dessert? I’d say both! I’m pretty sure I could (actually, I almost did) eat an entire loaf in one day. Don’t judge…I was taste testing for research purposes. {wink}

Tropical Banana Bread Recipe:

This recipe makes two smaller-sized loaves. If you have a large loaf pan, you could probably fit all this batter into one pan.

Tropical Banana Bread
 
Ingredients
  • 5 tablespoons butter, softened
  • ½ cup white sugar
  • ½ cup light brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 4 medium bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • ½ cup milk
  • 1 cup pineapple chunks, drained (save pineapple juice for the icing)
  • Frosting:
  • 3 tablespoons pineapple juice
  • 3 tablespoons butter, softened
  • 2 cups powdered sugar
  • 1 cup sweetened shredded coconut
Instructions
  1. Preheat oven to 350F.
  2. Grease 2 loaf pans.
  3. Beat butter and white sugar at medium speed until light and fluffy.
  4. Add brown sugar and beat well.
  5. Add eggs and vanilla and beat until well mixed.
  6. Add mashed banana and beat until well mixed.
  7. In a separate bowl, combine flour, baking soda, salt and baking powder.
  8. Alternate adding the flour mixture and milk to the banana mixture.
  9. Stir in pineapple pieces.
  10. Pour batter into loaf pans and put into oven.
  11. Bake for 50-60 minutes or until toothpick inserted in the middle comes out clean.
  12. Frosting:
  13. In a frying pan over medium heat, lightly toast coconut. Stir often so it doesn't burn. Let this cool completely before sprinkling over icing.
  14. In a medium bowl, beat butter, icing sugar and pineapple juice together until smooth.
  15. Spread evenly over cooled banana bread loaves. Top with cooled toasted coconut.
  16. Store in refrigerator.
