No-Bake Caramel Cookies

I love to bake but sometimes just don’t feel like actually baking and cleaning all the mess. One of my family’s favorite cookies are my No-Bake Caramel Cookies. Chances are you have all the needed ingredients in your pantry and best of all easy clean up! Don’t let the name fool you, there isn’t actual caramel in them. But with the butterscotch pudding, sugar, milk and butter, they taste just like caramel. Let me warn you, if you don’t have a big sweet tooth, you may want to cut the sugar in half when you make them. They will taste just as good, but will have a softer texture.

Caramel Cookies

No-Bake Caramel Cookies:

No-Bake Caramel Cookies

Ingredients
  • 2 cups sugar
  • ¾ cup butter
  • ⅔ cup evaporated milk
  • 3 cups quick cooking oats
  • 1 package instant butterscotch pudding
  • 1 cup chopped nuts (optional)
Instructions
  1. In a large saucepan, bring the sugar butter and milk to a rolling boil, stirring frequently.
  2. Boil for 1 ½ minutes.
  3. Remove from heat and add the pudding mix and oats and nuts.
  4. Drop by rounded spoonful on waxed paper.
  5. Let cool and enjoy!
