Lemon Cake

Ingredients
- 4½ cups all purpose flour
- 2 tsp. baking powder
- 1-1/2 tsp. baking soda
- 1 tsp. salt
- 1 cup (2 sticks) unsalted butter , softened
- 2-1/2 cups granulated sugar
- 5 eggs
- 1-1/2 cups milk
- 2 teaspoons pure vanilla extract
- ⅓ cup lemon juice
- 2 tbsp. lemon zest
Instructions
- Preheat oven to 350°F.
- Spray two 9 in. pans with baking spray.
- Combine flour, baking powder, baking soda and salt in a bowl and mix well.
- In a separate bowl, beat butter and granulated sugar with electric mixer until light and fluffy. Add eggs and vanilla until incorporated.
- Add flour mixture to butter mixture alternately with milk and lemon juice.
- Stir in lemon zest.
- Place batter in prepared pan.
- Bake 35 minutes or until toothpick inserted in center comes out clean.
- Cool completely before frosting.
Strawberry Buttercream

Ingredients
- 1 cup whole frozen strawberries, thawed and pureed
- 2 cup (4 sticks) salted butter, firm and slightly cold
- 7 cups confectioners' sugar, sifted
- 1 teaspoon clear vanilla extract
Instructions
- Cream butter in electric mixer fitted with the paddle attachment on medium speed until light and fluffy.
- Reduce mixer speed and add confectioners' sugar a cup at a time until well combined.
- Add vanilla and 6 tablespoons strawberry puree and mix until just blended.
- Make sure to not overmix.
