Strawberry Buttercream

Ingredients
  • 1 cup whole frozen strawberries, thawed and pureed
  • 2 cup (4 sticks) salted butter, firm and slightly cold
  • 7 cups confectioners' sugar, sifted
  • 1 teaspoon clear vanilla extract
Instructions
  1. Cream butter in electric mixer fitted with the paddle attachment on medium speed until light and fluffy.
  2. Reduce mixer speed and add confectioners' sugar a cup at a time until well combined.
  3. Add vanilla and 6 tablespoons strawberry puree and mix until just blended.
  4. Make sure to not overmix.
