Lemon Cake

Ingredients
  • 4½ cups all purpose flour
  • 2 tsp. baking powder
  • 1-1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 cup (2 sticks) unsalted butter , softened
  • 2-1/2 cups granulated sugar
  • 5 eggs
  • 1-1/2 cups milk
  • 2 teaspoons pure vanilla extract
  • ⅓ cup lemon juice
  • 2 tbsp. lemon zest
Instructions
  1. Preheat oven to 350°F.
  2. Spray two 9 in. pans with baking spray.
  3. Combine flour, baking powder, baking soda and salt in a bowl and mix well.
  4. In a separate bowl, beat butter and granulated sugar with electric mixer until light and fluffy. Add eggs and vanilla until incorporated.
  5. Add flour mixture to butter mixture alternately with milk and lemon juice.
  6. Stir in lemon zest.
  7. Place batter in prepared pan.
  8. Bake 35 minutes or until toothpick inserted in center comes out clean.
  9. Cool completely before frosting.
