I love feta cheese. Everything is betta with feta! {wink} I’m always looking for new ways to use feta in recipes and I think feta goes with spinach so perfectly. So I had an idea…what if I made dinner waffles with spinach & feta? Yep, sounded delicious…but what would I top it with? I was going to go with a cheesy cheddar sauce but it didn’t seem like the right match. A creamy mushroom sauce came to mind though and I’m so glad that I tried it because it was delicious! Even my dad, who turns his nose up to every supper I try to make for my parents, enjoyed tonight’s supper. Now that’s what I consider a victory!

Spinach & Feta Dinner Waffles:

Spinach & Feta Waffles

This recipe makes 3 large waffles which is enough to feed 4-6 people.
Ingredients
  • 2 cups flour
  • 2 tablespoons baking powder
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 eggs, slightly beaten
  • 2 tablespoons vegetable oil
  • 2 cups milk
  • .5 cup boiled, chopped and drained spinach
  • .5 cup crumbled feta cheese
Instructions
  1. Mix together flour, baking powder, sugar and salt together in a large bowl.
  2. Add beaten eggs and oil. Stir well to mix.
  3. Add milk, about .5 of a cup at a time, stirring well after each addition.
  4. Put the mixture in the refrigerator for about 2 hours to allow it time to thicken.
  5. Remove from fridge and add spinach & feta. Stir well to mix.
  6. Cook in a heated waffle maker until lightly browned on both sides.
  7. Serve topped with creamy mushroom sauce (recipe to follow below).

Creamy Mushroom Sauce

This sauce is great over our Spinach & Feta Waffles as well as on pasta, chicken and steak.
Ingredients
  • 2 tablespoons butter, unsalted
  • 1 cup diced fresh mushrooms
  • ¼ cup diced white onion
  • 237ml heavy cream (35%)
Instructions
  1. In a frying pan over medium heat, saute onions in butter until onions are slightly browned.
  2. Add mushrooms and cook until mushrooms are a light brown color.
  3. Reduce heat to low and add cream.
  4. Simmer until sauce is thickened (about 10 minutes). It will continue to thicken after you remove it from the heat.
