I love feta cheese. Everything is betta with feta! {wink} I’m always looking for new ways to use feta in recipes and I think feta goes with spinach so perfectly. So I had an idea…what if I made dinner waffles with spinach & feta? Yep, sounded delicious…but what would I top it with? I was going to go with a cheesy cheddar sauce but it didn’t seem like the right match. A creamy mushroom sauce came to mind though and I’m so glad that I tried it because it was delicious! Even my dad, who turns his nose up to every supper I try to make for my parents, enjoyed tonight’s supper. Now that’s what I consider a victory!
Spinach & Feta Dinner Waffles:
Dig out your waffle maker because you’re going to want to try these!
- 2 cups flour
- 2 tablespoons baking powder
- 1 tablespoon sugar
- 1 teaspoon salt
- 2 eggs, slightly beaten
- 2 tablespoons vegetable oil
- 2 cups milk
- .5 cup boiled, chopped and drained spinach
- .5 cup crumbled feta cheese
- Mix together flour, baking powder, sugar and salt together in a large bowl.
- Add beaten eggs and oil. Stir well to mix.
- Add milk, about .5 of a cup at a time, stirring well after each addition.
- Put the mixture in the refrigerator for about 2 hours to allow it time to thicken.
- Remove from fridge and add spinach & feta. Stir well to mix.
- Cook in a heated waffle maker until lightly browned on both sides.
- Serve topped with creamy mushroom sauce (recipe to follow below).
- 2 tablespoons butter, unsalted
- 1 cup diced fresh mushrooms
- ¼ cup diced white onion
- 237ml heavy cream (35%)
- In a frying pan over medium heat, saute onions in butter until onions are slightly browned.
- Add mushrooms and cook until mushrooms are a light brown color.
- Reduce heat to low and add cream.
- Simmer until sauce is thickened (about 10 minutes). It will continue to thicken after you remove it from the heat.
