These cranberry banana muffins are really easy to make and are delicious for breakfast or a mid-day snack. You can also substitute chocolate chips in place of (or in addition to) the cranberries. Packed full of fruit, these muffins are a hit with both kids and adults. My friend’s kids love these and call then the “Auntie Cheryl Muffins”.
Cranberry Banana Muffins:
- 3 ripe bananas
- 6 tablespoons vegetable oil
- ½ cup sugar
- 1 teaspoon salt
- 1 egg
- 1 teaspoon vanilla
- 1½ cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ cup cranberries (I use frozen cranberries)
- In a large bowl, mash bananas.
- Add oil, sugar and salt to bananas.
- Beat until well mixed.
- Add egg and vanilla.
- Beat until mixed.
- Add flour, baking soda and baking powder.
- Stir until well mixed.
- Add cranberries.
- Stir until mixed.
- Drop into greased muffin tins (makes 12 muffins).
- Bake at 350 degrees for 20 minutes.

I made these today and substituted the vegetable oil with coconut oil (melted) . Yummy! Also, used craisins in place of the cranberriesI I plumped them in hot water, (then drained them of course) before adding them to the recipe.
