Cranberry Banana Muffins

These cranberry banana muffins are really easy to make and are delicious for breakfast or a mid-day snack. You can also substitute chocolate chips in place of (or in addition to) the cranberries. Packed full of fruit, these muffins are a hit with both kids and adults. My friend’s kids love these and call then the “Auntie Cheryl Muffins”.

Cranberry Banana Muffins

These cranberry banana muffins are both easy to make and delicious to eat!
Ingredients
  • 3 ripe bananas
  • 6 tablespoons vegetable oil
  • ½ cup sugar
  • 1 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla
  • 1½ cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ cup cranberries (I use frozen cranberries)
Instructions
  1. In a large bowl, mash bananas.
  2. Add oil, sugar and salt to bananas.
  3. Beat until well mixed.
  4. Add egg and vanilla.
  5. Beat until mixed.
  6. Add flour, baking soda and baking powder.
  7. Stir until well mixed.
  8. Add cranberries.
  9. Stir until mixed.
  10. Drop into greased muffin tins (makes 12 muffins).
  11. Bake at 350 degrees for 20 minutes.

    I’m a muffinaholic!! I have made banana chocolate chip, but never banana cranberry. Will definitely be trying these!

    I made these today and substituted the vegetable oil with coconut oil (melted) . Yummy! Also, used craisins in place of the cranberriesI I plumped them in hot water, (then drained them of course) before adding them to the recipe.
