It was my birthday last week so I’ve been dreaming about birthday cake for weeks! A birthday wouldn’t be complete without delicious cake plus leftovers for breakfast. I’m trying to eat more vegetables lately and less chocolate but I’m allowed to indulge on my birthday, right? This Chocolate Chip Cookie Cake is the ultimate way to celebrate your special day! It’s 4 layers including white cake with semi sweet chocolate chips, chocolate cake with milk chocolate chips, ganache, chocolate frosting and plenty of chocolate chip cookies. It was a challenge to get the 4 layers to stay standing once sliced so you may want to lay it flat when serving so your cake slice doesn’t land on the floor. This is so tasty though that you’d probably want to eat it off the floor anyways. {wink}
Chocolate Chip Cookie Cake:
There are a lot of different steps in this cake but it’s all quite easy to do. You can stretch it out over a couple of days too so it doesn’t seem too overwhelming. I’m going to write each recipe out separately here to help eliminate some of the confusion. When putting it together, you’ll want to layer it this way:
- one chocolate cake layer on the bottom topped with ganache or frosting
- then a layer of white cake topped with ganache or frosting
- crush some chocolate chip cookies on top of this layer (I used Chips Ahoy chocolate chip cookies)
- then another layer of chocolate cake topped with ganache or frosting
- then a the final layer of white cake
- top the cake with chocolate frosting and ganache then crush chocolate chip cookies over the top of the cake and drizzle with more chocolate ganache
I didn’t put icing on the sides of the cake because there is already so much chocolate in it that it’s not really necessary.
Did I mention that you’ll need extra napkins? Okay, let’s jump into the recipes!
- 1 package chocolate cake mix
- 1 package instant chocolate pudding mix
- 1 cup vegetable oil
- 4 eggs
- ½ cup milk
- 1 teaspoon vanilla
- 2 cups milk chocolate chips
- Preheat oven to 350F.
- In a large bowl, mix together cake mix, pudding mix, vegetable oil, eggs, milk and vanilla.
- Beat for 2 minutes until mixed well.
- Stir in chocolate chips.
- Pour into two greased 9-inch round pans.
- Bake for 30 minutes or until toothpick inserted in centre of cake comes out clean.
- 1 package white cake mix
- 1 package instant vanilla pudding mix
- 1 cup vegetable oil
- 4 eggs
- ½ cup milk
- 1 teaspoon vanilla
- 2 cups semi sweet chocolate chips
- Preheat oven to 350F.
- In a large bowl, mix together cake mix, pudding mix, vegetable oil, eggs, milk and vanilla.
- Beat for 2 minutes until mixed well.
- Stir in chocolate chips.
- Pour into two greased 9-inch round pans.
- Bake for 30 minutes or until toothpick inserted in centre of cake comes out clean.
- 1 cup semi sweet chocolate chips
- 1 cup heavy cream (35%)
- 2 tablespoons butter
- Place chocolate chips in a medium bowl.
- In a small saucepan, bring heavy cream to a boil over medium heat.
- Once boiling, immediately pour over chocolate chips and let stand 5 minutes before stirring.
- Add butter to chocolate mixture and stir well until mixed.
- Let cool completely (it will get thicker as it gets cool) before using on the cake.
- ¾ cup unsalted butter, room temperature
- 2 cups powdered sugar
- ½ cup cocoa powder
- 1 teaspoon vanilla
- 2 tablespoon heavy cream (35%)
- Beat butter & sugar together on medium speed for 5 minutes.
- Add in cocoa powder and vanilla and beat for 30 seconds.
- Add heavy cream to the icing mixture and beat together on medium speed for 5 minutes.
