These Cheerios Banana Raisin Muffins would be a yummy after-school snack idea for kids. It’s a great recipe to get the kids helping in the kitchen too – they can be on Cheerios crushing duty! Not a fan of raisins? No problem! Swap the raisins out with dried cranberries or chocolate chips instead.

Cheerios Banana Raisin Muffins:

This recipe makes 12 muffins.

Cheerios Banana Raisin Muffins

The raisins can be substituted for dried cranberries.
Ingredients
  • 2 cups Cheerios cereal
  • ¾ cup all-purpose flour
  • ½ cup whole wheat flour
  • ⅓ cup brown sugar, packed
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • 1 cup mashed ripe bananas (2 to 3 medium)
  • ⅔ cup buttermilk
  • 2 tbsp vegetable oil
  • 2 egg whites
  • 1 cup raisins
Instructions
  1. Heat oven to 400F.
  2. Grease 12 muffin cups or line with paper baking cups.
  3. Place cereal in sealable food storage bag and slightly crush with rolling pin.
  4. In a large bowl, mix cereal, flours, brown sugar, baking powder and baking soda.
  5. Stir in remaining ingredients just until moistened.
  6. Divide batter evenly among muffin cups.
  7. Bake 18 to 22 minutes or until golden brown.
  8. Let stand about 2 minutes in pan and then remove to let cool on rack.
