Pumpkin Marshmallow Dessert

This pumpkin dessert is delicious! Even people who don’t like pumpkin pie have said that they love this. This dessert is quick & easy to make and requires only a five ingredients. It would be a great alternative (or addition) to your traditional Thanksgiving dessert table. The pumpkin filling is mixed with marshmallows – a combination that sounds a little weird but trust me when I say it is so good!

Pumpkin & Marshmallow Dessert

This is absolutely delicious and super easy to make.
Ingredients
  • 2 cups (500ml) pumpkin pie filling
  • 1 bag mini marshmallows (or 16 large marshmallows)
  • ¼ cup unsalted butter
  • 1¼ cup graham cracker crumbs
  • 1 small carton heavy whipping cream (35%)
  • 1 tsp vanilla
Instructions
  1. In a large pot over medium-high heat, melt marshmallows with pumpkin. Stir constantly because it can burn easily.
  2. Melt the butter in the microwave in a medium bowl.
  3. Add graham cracker crumbs to butter and stir to mix.
  4. Press ¾ of the graham cracker & butter mix into the bottom of a 9 x 9 pan.
  5. Top with pumpkin & marshmallow mixture.
  6. Top with remaining graham cracker mixture.
  7. Beat heavy cream and vanilla on high until soft peaks form.
  8. Once the pumpkin mixture is cool, top with whipped cream.
  9. Store in refrigerator.

What is your favorite Thanksgiving dessert? Will you be doing the cooking this year? My mom and I usually share the responsibilities so she’ll work on the main meal and I’ll bring the dessert. It’s always a group effort with the dishes afterwards…it helps to burn off some of those Thanksgiving calories. {wink}
