Thank goodness my husband isn’t a picky eater because we’ve been stuck in a dinner rut for a while now. Being a mother of an energetic toddler while also working from home doesn’t leave me a lot of time to cook gourmet meals. Although I love trying new recipes, I’m not able to do so every night of the week. Our usual dinner menu includes salad, chicken and noodles or rice. It tastes great, it’s easy to put together but let’s face it…it is a little boring. What does get our taste buds jumping for joy is Old El Paso’s kits for Mexican food made easy! That is why I was so excited to be chosen for the Old El Paso Brand Ambassador campaign!
I’ve been a fan of Mexican food for as long as I can remember. Taco night in the Mitchell house was always something I looked forward to while growing up. Actually, I have a GREAT story to tell you about Mexican food and although it happened over 20 years ago, it’s still a story that my family laughs at.
I was about 14 years old and my parents took my brother and I on a family trip to Mexico. We went out for dinner one night and I ordered fajitas. If you’ve ever ordered fajitas at a restaurant you know that they start by bringing you out warm basket of tortillas with a lid on them to keep them warm until your sizzling plate of chicken and vegetables arrives. Well, my parents had obviously never ordered fajitas so when my basket of tortillas came out, my family took off the lid and each took one for their plate. I tried to tell them that it was for my meal and part of my fajita dish. They argued that they were Mexican dinner buns and proceeded to spread butter on them and eat them as an appetizer. No, I’m not kidding. So when my sizzling pan of chicken and veggies arrived, I had to just eat it out of the pan with a fork because my tortillas had already been gobbled up. I still tease my parents about this all the time when I see fajitas on a menu!
My husband shares my love for Mexican food and thankfully he understands what a fajita is. My husband always gets so excited when he buys me a gift that he can’t bother to wrap it or wait for my birthday. He just comes home and takes the gift out of the shopping bag because he’s so proud of his special find. A few years ago (days before my actual birthday) he came home with a shopping bag and I could tell by the look on his face that he had ants in his pants to give me my gift. So he opened the shopping bag and pulled out a quesadilla maker and said “You love to make me things to eat and I love to eat quesadillas!”. Not his finest moment of romance but we have used that quesadilla maker a lot over the years. Did you know you can also make dessert quesadillas? Stay tuned for some delicious recipes!
