Do you ever crave cake but don’t want to make a full-sized cake because you know you’ll eat it all within a day? Ya…me too. {wink} This is where a mug cake is the perfect solution! It takes just 5 minutes to make from start to finish and it’s the perfect size for one large serving. It’s enough to satisfy your sweet tooth without the belly ache that comes from eating a full-sized cake alone over the weekend. This Chocolate Caramel Mug Cake recipe is probably big enough to share between two people but I don’t share my desserts with anyone. You want half my broccoli? Sure, pass your plate. You want a bite of my cake? Absolutely not.

After reading through several Chocolate Mug Cake recipes on Pinterest, I decided that this Chocolate Mug Cake by Table For Two looked the tastiest. How could you not love Nutella in a cake, right?! I changed the recipe slightly to add in some extra chocolate and replace the Nutella with caramel. The results were delicious! It’s the perfect dessert to enjoy late at night while sitting in your pyjamas watching The Bachelor.

Chocolate Caramel Mug Cake Recipe:

The biggest difference between this mug cake and many of the others you’ll find is that this one doesn’t use eggs. For extra chocolate deliciousness, I add a few chopped caramel chocolate bar pieces on top with a scoop of vanilla ice cream. The cooking time is going to depend on your microwave. Start checking it at about 90 seconds. My microwave (on high) cooks this perfectly in about 2 minutes.

Ingredients
  • ¼ cup all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • 2 tablespoons sugar
  • ¼ cup milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons caramel sauce (the ice cream topping kind is perfect)
  • 1 tablespoon mini semi-sweet chocolate chips
Instructions
  1. In an oversized mug (it leaves more room for the cake to grow plus space for your scoop of ice cream), stir together flour, cocoa powder, baking powder and sugar.
  2. Pour in milk and vegetable oil and stir until the batter is no longer lumpy.
  3. Add in caramel sauce and chocolate chips then stir just until blended.
  4. Heat in microwave anywhere from 90 seconds to two minutes. Time depends on microwave & power setting, mine takes 2 minutes.
  5. Top with a scoop of vanilla ice cream.
