Banana Cream Crepe Pie

This Banana Cream Crepe Pie is a delicious dessert but I would totally classify it as a breakfast food too! Made with ingredients like eggs, bananas and cream, it sounds like the perfect breakfast food to me. In my crepe recipes, I use my handy crepe maker but you could make crepes in a frying pan too (you’ll have to Google that for tips though as I’ve never tried making crepes in a frying pan). Here’s the Crepe Maker that I use.

Banana Cream Crepe Pie

A delicious dessert or special Sunday brunch treat. This recipe makes approximately 7 crepes.
Ingredients
  • Crepes:
  • ½ cup all purpose flour
  • 1 eggs
  • ¼ cup milk
  • ¼ cup water
  • pinch of salt
  • 1 tablespoons butter (unsalted), melted
  • Filling:
  • 3 bananas, cut into thin slices
  • ½ cup heavy cream (35%)
  • ½ tablespoon sugar
  • 2 cups prepared vanilla pudding
  • ¾ cup graham cracker crumbs
Instructions
  1. Crepes: With a wire whisk (or mixer), combine flour and egg. Add milk & water gradually. Beat until smooth. Add salt and butter. Stir to mix well. Follow the instructions on your crepe maker to cook crepes. Let crepes cool before layering in pie.
  2. Filling: Beat heavy cream and sugar until light & fluffy. Stir in vanilla pudding.
  3. In a pie plate, place one crepe and top with approximately ⅓ cup pudding mixture, then about 10 banana pieces then sprinkle with graham cracker crumbs. Repeat layers finishing with a plain crepe on top.
