Tropical Banana Bread
- 5 tablespoons butter, softened
- ½ cup white sugar
- ½ cup light brown sugar, packed
- 3 large eggs
- 1 teaspoon vanilla extract
- 4 medium bananas, mashed
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ¼ teaspoon baking powder
- ½ cup milk
- 1 cup pineapple chunks, drained (save pineapple juice for the icing)
- Frosting:
- 3 tablespoons pineapple juice
- 3 tablespoons butter, softened
- 2 cups powdered sugar
- 1 cup sweetened shredded coconut
- Preheat oven to 350F.
- Grease 2 loaf pans.
- Beat butter and white sugar at medium speed until light and fluffy.
- Add brown sugar and beat well.
- Add eggs and vanilla and beat until well mixed.
- Add mashed banana and beat until well mixed.
- In a separate bowl, combine flour, baking soda, salt and baking powder.
- Alternate adding the flour mixture and milk to the banana mixture.
- Stir in pineapple pieces.
- Pour batter into loaf pans and put into oven.
- Bake for 50-60 minutes or until toothpick inserted in the middle comes out clean.
- Frosting:
- In a frying pan over medium heat, lightly toast coconut. Stir often so it doesn't burn. Let this cool completely before sprinkling over icing.
- In a medium bowl, beat butter, icing sugar and pineapple juice together until smooth.
- Spread evenly over cooled banana bread loaves. Top with cooled toasted coconut.
- Store in refrigerator.
