Introducing the stars of your next bake sale: {insert drumroll here} Rolo Brownie Bites! It’s the best brownie recipe crumbled and formed into truffles with a Rolo stuffed in each one then dipped in chocolate. Commence drooling. How do I know this is the best brownie recipe? Trust me – I’ve tried a lot of brownies over the last 40 years (I’m almost 40 years old – YIKES!) so I’m confident in saying these are the best brownies. This recipe makes 14 truffles and each truffle is approximately a 2-tablespoon size. They are a great choice for a bake sale or neighbourhood block party. Of course you don’t have to share these Rolo Brownie Bites. I won’t tell on you if you hide these in the freezer for two weeks worth of midnight snacks after your family goes to bed. It will be our little secret.
Rolo Brownie Bites:
The 2-tablespoon size may seem a bit big but you need that much brownie mixture to cover the Rolo in the middle. You could make these smaller with mini Rolos but mini Rolos just don’t have that gooey caramel middle that makes these truly droolworthy.
- 1 cup semi-sweet chocolate chips
- ¾ cup unsalted butter
- ¾ cup all-purpose flour
- ¼ cup unsweetened cocoa powder
- ¼ teaspoon salt
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup milk chocolate chips
- 14 Rolos (regular size)
- 8 ounces Baker's semi-sweet chocolate
- Preheat oven to 350F.
- Line 8" x 8" pan with parchment paper.
- In a small bowl, melt butter with semisweet chocolate chips in the microwave. Check and stir at 30 second intervals because you don't want to overheat this. You want this melted but not hot.
- In a separate bowl, combine flour, cocoa powder and salt. Set this aside.
- In a large bowl, whisk sugar with eggs and vanilla until well mixed.
- Add melted chocolate mixture to egg mixture and stir just until mixed.
- Add flour mixture to chocolate mixture and stir just until combined.
- Stir in milk chocolate chips.
- Pour brownie batter into parchment paper lined pan.
- Bake 30-35 minutes.
- Let brownies cool in pan for about 30 minutes.
- Line a baking sheet with wax paper.
- Crumble brownie mixture and form into 2-tablespoon size balls.
- Flatten each ball and wrap a Rolo in the middle of each. Form brownie ball around Rolo so the Rolo is completely covered.
- Place truffles on wax paper and place in freezer for 30 minutes.
- Melt Baker's semi-sweet chocolate in microwave for about 30 seconds (stir after 30 seconds - you want this just melted but not hot).
- Dip each chilled truffle ball into the melted chocolate and coat evenly.
- Transfer dipped truffles back to wax paper lined baking sheet.
- Place truffles in freezer for 15 minutes until chocolate hardens.
- Store in re-sealable food storage bag in fridge.
