These cookies are perfect when you want something festive but you’re short on time. All the decorating is done in a few simple steps – you don’t even need to wait for the icing to dry!

If you’ve never used sanding sugar before, you’re going to LOVE it! It comes in dozens of colors and adds a wonderful texture and sparkle to your cookies. Just be sure to set up your work area on a parchment paper lined cookie sheet or a rimmed plate. The combination of sanding sugar and airbrush is easier to control this way.

Using your white icing, outline a funnel shape down the the middle section of your cookie-leaving just a small space from the edge. Immediately fill in and use a scribe tool or toothpick to distribute your icing.

Sprinkle your white sanding sugar directly onto the wet icing. Doesn’t it have the most beautiful sparkle?

Shake of the excess sanding sugar and push to the side. You’ll be using this again in just a second, but you don’t want the airbrush to cause a sugar snowstorm.

Using your airbrush gun or Wilton colormist, spray a light coat of gold over the wet icing and sanding sugar. The air will push some of the sugar crystals into the icing and you’ll end up with a nice dimensional effect. Continue spraying in light even layers until you reach your desired color.

Next outline and flood the remainder of your cookie using the same white icing.

While this icing is still wet, sprinkle just a pinch of the uncolored sanding sugar over the top portion of your cookie. Voila! Perfect fizzy bubbles!

If you’re still good on time, pipe the year or a fun message on your cookies using black piping icing. Let the cookies dry a few hours before arranging on a pretty platter, then pop open your own bottle of champagne and get ready to celebrate!
