Those of you who have been following me for a while know that I love nachos. Extra cheese, beef, peppers, crunchy taco chips, sour cream…now I’m getting hungry. I’m out for a nacho night with friends almost once a week so when I was trying to think of a new summer party recipe, nachos came to mind right away. These Ice Cream Nachos are broken waffle bowl pieces, dipped in chocolate, then topped with scoops of your favorite ice cream, candies, crushed cookies, sprinkles and more. Oh my gosh – these are GOOD. Like, really, really good. So good that I *may* have had some for breakfast. Taste testing new recipes is a tough job…but someone has to do it. {wink}

Ice Cream Nachos:

I don’t know if I should call this a recipe since you’re not actually making anything – just putting a bunch of delicious desserts together. I’m going to write it out as a recipe for you anyways so you have something to print and save in your cookbook for your next party. I’m not including any quantities because you can just pile it as high as you want with waffle cone “chips”, ice cream and your favorite toppings.

Ingredients
  • waffle bowls, broken into nacho chip size pieces
  • Baker's Semi-Sweet Chocolate, melted
  • ice cream
  • your favorite ice cream toppings like fudge, broken cookies, chocolate coated candies, sprinkles, etc.
Instructions
  1. Place a sheet of wax paper on a large cookie sheet.
  2. Dip ¾ of each waffle chip into the melted chocolate then place it on the wax paper to let the chocolate harden.
  3. When all the waffle chips are dipped, place this tray of chips in the freezer so the chocolate can harden.
  4. Remove from the freezer right before serving, top with scoops of your favorite ice cream and a variety of candies and sprinkles.
