Mug cakes are perfect for those days you’re craving cake but you (1) lack the energy to bake a full cake and (2) know that if you bake a full cake you’ll eat a full cake then feel guilty for the amount of calories you gobbled down. They take less than 5 minutes to make and are the perfect serving size for one. Ya, they are probably big enough to share with your spouse but I don’t share my desserts…maybe this is why I’m divorced. Ha! Oh well, more cake for me. Silver linings, right? {wink} This Cookies and Cream Mug Cake is perfect for you Oreo lovers – you know who you are!
Cookies and Cream Mug Cake:
Topping the mug cake with whipped cream or ice cream is optional but highly recommended. I don’t usually like ice cream with my cake but there’s just something so delicious about a warm cake topped with vanilla ice cream. Oh great, now I’m drooling again! While I go grab a napkin for this drool, you can start checking your pantry to see if you have all the ingredients you need to make this Cookies and Cream Mug Cake.
- ¼ cup semisweet chocolate chips
- 3 tablespoons heavy cream (35%)
- 1 tablespoon sugar
- ½ tablespoon vegetable oil
- 2 tablespoons all-purpose flour
- ¼ teaspoon baking powder
- ¼ cup crushed Oreos
- extra mini Oreos with whipped cream or vanilla ice cream for topping
- In a 16 ounce mug (I use a larger sized mug to prevent spills in the microwave), stir together chocolate chips and heavy cream and heat in microwave for 30 seconds. Remove from microwave and stir until well combined.
- Stir in sugar and vegetable oil until well combined.
- Stir in flour and baking powder until smooth.
- Stir in crushed Oreos just until combined.
- Bake in microwave for 1.5 to 2 minutes. Timing depends on your microwave and heat settings. If the cake still looks sticky and uncooked around the edges, it’s not quite done yet.
- Top with whipped cream or vanilla ice cream and mini Oreos.
