I made these Chocolate Chip Caramel Cookies over the weekend and they’ve been sitting in my fridge for a few days now waiting to be delivered to a friend. The weather this week has been -45 (yes, you read that correctly minus 45) so I’ve been hiding indoors as much as possible. It’s a good thing I’ve had a supply of delicious cookies to get me through these hibernation days – ha! I’ve been trying not to snack on them but they are so yummy! So sorry to my friend but…your cookie delivery will be a few cookies short. {wink}
These cookies are really easy to make and they start with a boxed cake mix. There’s a hidden chocolate caramel candy bar hidden in the middle of each (I use the bite-sized Mars bars). Not a diet food for those of you still trying to stick to a healthy eating new year’s resolution but we all deserve an occasional treat, right?
When they first come out of the oven, you’ll get a delicious melted candy bar inside {drooling} but they are just as delicious straight out of the fridge.
Chocolate Chip Caramel Cookies:
When making these cookies, I save a few of the chocolate chips so I can place some on the tops of the cookies right before I bake them. Just makes them a little prettier but just as delicious either way.
- 8 ounces cream cheese, room temperature
- ½ cup unsalted butter, room temperature
- 1 egg
- 1 box French Vanilla (or White) cake mix
- 300g bag of semi-sweet chocolate chips
- 24 mini chocolate caramel squares (I use bite-sized Mars bars)
- Preheat oven to 350F.
- In a large bowl, beat cream cheese with butter until smooth.
- Add in egg and beat just until mixed.
- Add in cake mix and beat until combined.
- Stir in chocolate chips (reserving about ¼ cup to place extra chocolate chips on the top of each cookie before baking).
- Form cookies into balls (about two tablespoons in size each). Place a chocolate bar in the middle of each cookie and shape dough around the chocolate bar so it's hidden inside. The dough will stick to your hands so you'll want to wet your hands slightly to form the dough around the chocolate bars.
- Place a few chocolate chips on the top of each cookie.
- Bake cookies on an ungreased cookie sheet (about 2" apart) for about 12 minutes (until bottom of cookies start to brown slightly).
- Allow to cool on cookie sheet for about 5 minutes before removing to wire rack to cool completely.
- Store cookies in the refrigerator.
