Popcorn Cake

The is my grandma’s popcorn cake recipe – don’t let her know that I shared it! {wink} It’s a favorite around our house at Christmas time. She always makes one for my dad and wraps it up really well and mails it to him. Can you believe that it still arrives at their place soft & delicious! Grandma puts jujube candies in her cake but I used jelly beans in this one. You could use mini candy coated chocolates as well but note that chocolate covered pieces will likely melt and will turn your popcorn cake a little brown.

My grandma always makes hers in a bundt cake pan but you could also press this into a regular square pan or even shape them into individual sized popcorn balls.

This popcorn cake is delicious and super easy to make. Add in some candy for a special added treat!
Ingredients
  • ½ cup butter, unsalted
  • 2 bags regular marshmallows (each bag is about 280g or 10 oz)
  • ½ tsp vanilla
  • 2 cups jelly beans
  • 6 cups plain popped popcorn
Instructions
  1. In microwave, melt butter in large bowl (30-60 seconds).
  2. Add marshmallows, tossing to coat and microwave 90 seconds.
  3. Stir until mixed well (about 45 seconds). Marshmallows should be completely melted.
  4. Add vanilla.
  5. Add popped popcorn and stir to mix well.
  6. Add in jelly beans, small amounts at a time, and stir to mix well.
  7. Put into greased bundt cake pan or shape into popcorn balls.
  8. Wet hands under cold water (shake off excess water) and press into pan.
  9. Put in fridge for about 2 hours to set.
  10. To get it out of the pan in one piece, you may have to wet your hands again to loosen the cake from the pan.
