Popcorn Cake
- ½ cup butter, unsalted
- 2 bags regular marshmallows (each bag is about 280g or 10 oz)
- ½ tsp vanilla
- 2 cups jelly beans
- 6 cups plain popped popcorn
- In microwave, melt butter in large bowl (30-60 seconds).
- Add marshmallows, tossing to coat and microwave 90 seconds.
- Stir until mixed well (about 45 seconds). Marshmallows should be completely melted.
- Add vanilla.
- Add popped popcorn and stir to mix well.
- Add in jelly beans, small amounts at a time, and stir to mix well.
- Put into greased bundt cake pan or shape into popcorn balls.
- Wet hands under cold water (shake off excess water) and press into pan.
- Put in fridge for about 2 hours to set.
- To get it out of the pan in one piece, you may have to wet your hands again to loosen the cake from the pan.
