Superhero Popcorn Cake

Do you have a favorite superhero? My son (3 years old) doesn’t have an interest in superheros yet but he knows most of their names. I’m sure he’ll develop an interest in them in the next few years and I’m almost certain there will be a superhero party or two in our future! Today’s treat is a Superhero Popcorn Cake made using my grandma’s delicious popcorn cake recipe. I love that cake and there are so many delicious ways to mix it up a bit – popcorn balls, squares, or using an angel food cake pan like my grandma uses.

Superhero Popcorn Cake Instructions:

I won’t type out the full recipe again here for you – start here with my Grandma’s Popcorn Cake recipe.

After melting the marshmallows and butter, mix in a few drops of blue food coloring. Dump in the popcorn and stir to coat well.

Put popcorn mixture into a greased 9×11 cake pan and top with red, blue and yellow candy coated chocolates (like M&M’s).

For the little lightning bolts, I used yellow Starburst candies. Cut them in half then cut them into lightning bolt shapes. Having trouble getting the shape right? You can use your hands to shape them as well.

Add the lightning bolts to the cake and place in the fridge to harden.

Cut into squares and store in a plastic food storage bag either in the refrigerator (they’ll be more crunchy this way) or on the counter.
