These Loaded Baked Potato Nachos are super easy to make and they are so delicious! They are just like a baked potato except in a fun nacho variation that make them perfect for parties…or to gobble down while on the couch watching Family Feud like I was doing tonight! Both my husband and I loved this meal and I know we’ll be making it again sometime soon.
How To Make Loaded Baked Potato Nachos:
For this recipe, I’m not going to list any quantities because nacho toppings all depend on your personal preference. Load them as high as you’d like!
Start by preheating the oven to 450F.
Thinly slice two potatoes, put them in a large bowl and cover them in water to soak for 10 minutes.
Drain the water and place them in a single layer on a paper towel to absorb the rest of the water.
Layer the potato slices on a cookie sheet sprayed with non-stick cooking spray.
Top with sea salt.
Bake in the oven for 17 minutes or until potatoes are tender. You want them to be soft – not mushy, not crunchy but soft enough that they aren’t undercooked.
Top potatoes with shredded cheese, sliced green onions and real bacon bits. Put back into the oven and bake until the cheese has melted.
For a spicier version, top with a few sliced jalapenos. Make sure you have a glass of water beside you before digging in!
Serve with a scoop of sour cream on the top.
Super simple, right? This was a last minute recipe idea this evening but it turned out to be a new favorite!
