I don’t really like surprises. I’m a planner and I love my scheduling tools. I don’t like April Fool’s Day because of the unknown surprises that could be hiding around any corner. I will make one exception for surprises and that’s with filled cupcakes. Biting into a delicious cupcake and finding it’s been filled with lemon curd, caramel, marshmallow cream…I can handle that surprise.
This is a tasty collection of filled cupcakes by other talented bakers and bloggers. To view the full recipe for each, simply click on the title of the recipe and it will open in a new window for you.

Filled Cupcakes:
While in Disneyland last year, I didn’t try the Pineapple Dole Whip and I’m still kicking myself about it. I guess we need to plan another Disney trip soon! These Pineapple Dole Whip Cupcakes (pictured above) by Yummy Crumble have a pineapple curd filling. They would be perfect for a Hawaiian-themed celebration or for your little Disney fans.
Every time I think of “rocky road”, I think of this delicious rocky road fudge that I used to buy when I lived in Alberta. I would sit down and eat the entire slab of fudge, end up with a tummy ache, and then crave more the next day. These Rocky Road Cupcakes by Easy Baked are filled with creamy marshmallow and they look so good! You’re sure to get frosting on your nose with these ones but it would be so worth it.
These Lemon Pudding Cupcakes by Make Bake Celebrate couldn’t be any cuter! They have a tasty lemon pudding filling. Instead of lemonade stands next summer, I’d love to see kids selling these on their driveways…I’d stop at every house!
When deciding on a cupcake at a bakery, I’m always looking for the ones with coconut on them. These Lemon Curd Filled Coconut Cupcakes by On Sugar Mountain looks so tasty!
With a title like Sunrise Cupcakes, they must be perfect for breakfast. Right? These cupcakes by Lemon Tree Dwelling are filled with a orange curd. Yep, I’d have no problem calling a cupcake with strawberries & oranges breakfast around here!
These Peanut Butter & Jelly Cupcakes by Spache The Spatula are filled with jam, topped with a peanut butter frosting and drizzled with jam. You’ll want a glass of cold milk with these cupcakes.
Many years ago (I won’t say how many or I’ll totally sound old), I used to work in a donut shop. It was one of my first jobs and I came home smelling like donuts every day. When you are around donuts that much, you kind of get sick of them…unless it was a Boston Cream Donut. A person can never get tired of those! These Boston Cream Cupcakes by Tide & Thyme are filled with a delicious pastry cream.
These Strawberry Shortcake Cupcakes by The Culinary Chronicles are so pretty and would be perfect for a baby shower or bridal shower. They are filled with a fresh strawberry compote.
These Blackberry Filled Cupcakes with Blackberry Lime Frosting by My Simple Kitchen sounds so unique. They would be perfect for a summer party.
Caramel stuffed cupcakes with caramel buttercream – oh yeah! It doesn’t get much more delicious than this. Check out the Caramel Butter Cupcake recipe on Suz Bakes.
These Lemon Meringue Cupcakes by Bree’s Kitchen are filled with a homemade lemon curd. It’s a unique recipe that would be popular with all ages.
