Chocolate Raspberry Oat Bars

  • 1 package (18.25 oz/515 g) white cake mix
  • 2½ quick-cooking rolled oats
  • 1 cup butter, melted
  • 1 cup seedless raspberry jam
  • 1⅓ cups semi-sweet chocolate chips
  • Confectioner's (icing) sugar (optional)
  1. Preheat oven to 375 F.
  2. Grease a 13 x 9 inch cake pan.
  3. In a large bowl, combine cake mix, oats and melted butter, mixing until well blended.
  4. Press half of crumbles firmly into prepared pan.
  5. Spread jam evenly over unbaked crust.
  6. Sprinkle chocolate chips over jam.
  7. Sprinkle evenly over the chips.
  8. Bake for 35 to 40 minutes or until golden.
  9. Cool completely in pan on a wire rack.
  10. Cut into bars.
