Chocolate Chip Cake Mix Cookies

These soft cookies make a delicious snack or dessert. They freeze really well so be sure to pack your freezer with these during the holiday season! They also burn quickly so keep an eye on the timer.
  • 1 package (18.25 oz/515 g) white cake mix
  • ½ cup butter, melted
  • 2 eggs
  • 1 tsp vanilla
  • 2 cups semi-sweet chocolate chunks or chips
  1. Preheat oven to 350 F.
  2. Grease baking sheets with non-stick cooking spray.
  3. In a large mixer bowl, combine cake mix, melted butter, eggs and vanilla.
  4. Beat on low speed for 1 minute or just until smooth.
  5. Stir in chocolate chips.
  6. Drop dough by rounded tablespoons onto prepared baking sheets. Give them space to spread while baking.
  7. Bake for 10 - 15 minutes or until light and golden. I start checking the cookies after about 8 minutes because they burn quickly.
  8. Cool on baking sheets for 5 minutes, then remove to wire racks and cool completely.
