Lemon Loaf

The lemon frosting is optional but I love the extra boost of lemon flavor that it adds.
  • 1½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup sour cream
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tablespoons lemon zest
  • juice from 2 fresh lemons
  • 1 teaspoon vanilla extract
  • ½ cup vegetable oil
  • Frosting:
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons unsalted butter, softened
  • 2 cups confectioners' (icing) sugar
  1. Preheat oven to 350F.
  2. Grease one 9 inch loaf pan.
  3. In a medium bowl, whisk together flour, baking powder, and salt.
  4. In a separate large bowl, whisk together sour cream, eggs, granulated sugar, lemon zest, lemon juice, vanilla and vegetable oil.
  5. Once wet ingredients are well mixed together, add in dry ingredients and whisk well until combined.
  6. Pour into greased loaf pan.
  7. Bake for 60 minutes or until a toothpick inserted in middle comes out clean.
  8. Let cool completely before adding frosting.
  9. Frosting:
  10. Whisk together lemon juice, butter and powdered sugar until well mixed. Spread over cooled loaf.
  11. Store in refrigerator until ready to serve.
