Lemon Loaf

- 1½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup sour cream
- 2 eggs
- 1 cup granulated sugar
- 2 tablespoons lemon zest
- juice from 2 fresh lemons
- 1 teaspoon vanilla extract
- ½ cup vegetable oil
- Frosting:
- 3 tablespoons fresh lemon juice
- 3 tablespoons unsalted butter, softened
- 2 cups confectioners' (icing) sugar
- Preheat oven to 350F.
- Grease one 9 inch loaf pan.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, whisk together sour cream, eggs, granulated sugar, lemon zest, lemon juice, vanilla and vegetable oil.
- Once wet ingredients are well mixed together, add in dry ingredients and whisk well until combined.
- Pour into greased loaf pan.
- Bake for 60 minutes or until a toothpick inserted in middle comes out clean.
- Let cool completely before adding frosting.
- Frosting:
- Whisk together lemon juice, butter and powdered sugar until well mixed. Spread over cooled loaf.
- Store in refrigerator until ready to serve.
