Rolo Cheesecake Cookie Bars

- Cookie Base:
- ½ cup unsalted butter, melted
- 1 cup light brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup mini Rolos
- Cheesecake Layer:
- 8 ounces cream cheese, softened
- ½ cup granulated sugar
- 1 egg
- ½ teaspoon vanilla extract
- 1 cup mini or regular sized Rolos
- Preheat oven to 350F.
- Line a 9" x 9" baking pan with parchment paper.
- Cookie Base:
- In a large bowl, beat butter and brown sugar on medium speed until well combined.
- Add in egg and vanilla then beat until well blended.
- Beat in flour until well mixed.
- Stir in Rolos
- Firmly press cookie layer evenly into bottom of prepared pan.
- Cheesecake Layer:
- In a separate bowl, beat cream cheese until smooth.
- Beat in sugar until combined.
- Beat in egg and vanilla until smooth.
- Stir in Rolos.
- Pour cheesecake batter over cookie batter.
- Bake 30-35 minutes.
- Let cool completely before cutting into bars.
- Store covered in refrigerator.
