Chocolate Chip Cookie Pizza Recipe
Author: Cheryl Kirkness of www.MomsAndMunchkins.ca
- 2 cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon baking soda
- ¾ cup unsalted butter, softened
- ¾ cup light brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 1½ cups semi-sweet chocolate chips
- 1½ cups candy-coated chocolates (like M&Ms)
- Optional: jar of vanilla icing and sprinkles
- Preheat oven to 350F.
- Spray a 12-inch pizza pan with non-stick cooking spray.
- In a medium bowl, whisk together flour, salt and baking soda until well combined. Set this aside.
- In a large bowl, beat together butter, brown sugar and granulated sugar until smooth.
- Beat egg and vanilla into the butter mixture.
- Beat dry ingredients into the wet ingredients until well combined. This will be a crumbly mixture.
- Stir in all of the chocolate chips and 1 cup of the candy-coated chocolates (save the other ½ cup of candy-coated chocolates for now).
- Press cookie dough into the pizza pan evenly (right up to the edges of the pan).
- Press the remaining ½ cup of candy-coated chocolates into the top of the cookie.
- Bake for 20-24 minutes (less time baking means a softer cookie).
- Remove from oven and let cool completely before slicing (I use a pizza cutter for slicing this) and removing from pan.
- Optional: Decorate the outer edge of cookie with swirled vanilla icing and sprinkles.
