Oatmeal Chocolate Chip Cookies
Serves: 24
You can swap the chocolate chips in this recipe with raisins, dried cranberries or candy coated chocolates (like M&Ms).
  • 1 large egg
  • ½ cup unsalted butter, softened
  • ½ cup light brown sugar, packed
  • ¼ cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1½ cups large flake oats (not instant or quick oats)
  • 1 cup all-purpose flour
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • 2 cups semi-sweet chocolate chips (separated)
  1. In a large bowl, beat together egg, butter, brown sugar, granulated sugar and vanilla. Beat on medium speed until well mixed.
  2. Add in oats, flour, cinnamon and baking soda. Beat just until combined.
  3. Stir in 1.5 cups of chocolate chips. Set the remaining ½ cup of chocolate chips aside for now.
  4. Cover bowl in plastic wrap and allow dough to chill in fridge for 2 hours.
  5. Preheat oven to 350F.
  6. Spray a cookie sheet with non-stick cooking spray or use a silicone baking mat.
  7. Scoop cookie dough into 2-tablespoon size cookies.
  8. Place cookies two inches apart on cookie sheet.
  9. Using the remaining ½ cup of chocolate chips, press extra chocolate chips into the top of each unbaked cookie.
  10. Bake cookies for approximately 12 minutes. Remove from oven and let cool on cookie sheet for 10 minutes before removing to wire rack to cool completely.
