Mini Cinnamon Loaves

Instead of mini loaves, you could bake these as a dozen muffins. For muffins, you'll want to reduce the baking time by about 5 minutes.
Ingredients
  • Loaves:
  • 1 ¾ cups all-purpose flour
  • 1 ¼ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 ½ teaspoons vanilla extract
  • ¾ cup milk
  • Topping:
  • 4 tablespoons unsalted butter, melted
  • ½ cup light brown sugar, packed
  • 1 tablespoon cinnamon
Instructions
  1. Preheat oven to 350F.
  2. Grease 10 mini loaf pans.
  3. Loaves:
  4. In a medium bowl, stir together flour, baking powder and salt. Set aside.
  5. In a large bowl, beat butter and granulated together until creamy.
  6. Beat eggs and vanilla into the butter mixture until well blended.
  7. Alternate adding milk and flour mixture to the butter mixture, beating between additions, until well mixed.
  8. Pour evenly into 10 greased mini loaf pans. Set aside.
  9. In a small bowl, combine topping ingredients (melted butter, brown sugar and cinnamon) together until well mixed.
  10. Drop even amounts of topping over each unbaked loaf and swirl the topping a bit to mix it into each unbaked loaf.
  11. Bake for 25 minutes or until toothpick inserted in center of loaf comes out clean.
  12. Remove from oven and cool in pan for 1 hour before removing to wire rack to cool completely.
