S'mores Cheesecake

- Crust:
- ¾ cup unsalted butter, melted
- 3 cups graham cracker crumbs
- 2 tablespoons granulated sugar
- Cheesecake:
- 3 packages (250 g each) cream cheese, softened
- ¾ cup granulated sugar
- 4 eggs
- ½ cup sour cream
- 1 tsp vanilla extract
- 2 tbsp all-purpose flour
- 1 jar (7.5 oz) marshmallow fluff
- 1.5 cups milk chocolate chips
- Frosting:
- ½ cup vegetable shortening
- ½ cup unsalted butter, softened
- 1 teaspoon vanilla extract
- 1 jar (7.5 oz) marshmallow fluff
- 3 cups confectioners sugar (icing sugar)
- 4 ounces Baker's semi-sweet chocolate
- Toppings:
- ½ cup mini marshmallows
- 4 ounces Baker's semi-sweet chocolate (melted)
- 1 graham cracker, broken into small pieces
- Preheat oven to 325F.
- Crust:
- In a medium bowl, combine crust ingredients (butter, graham cracker crumbs and sugar) until well combined.
- Press into the bottom of a 9" round springform pan.
- Bake for 10 minutes.
- Cheesecake:
- Combine cream cheese and sugar in large bowl; beat with an electric mixer on low speed until smooth.
- Add eggs, one at a time, beating well after each addition and occasionally scraping side of bowl.
- Beat in sour cream, vanilla and flour.
- Add marshmallow fluff and beat until well combined.
- Stir in chocolate chips.
- Pour batter over crust; smooth top.
- Bake until top is golden and center is set (no longer jiggling), about 60-70 minutes. Let cool on wire rack.
- Cover and refrigerate for at least 4 hours before removing from pan.
- Run knife around inside of pan before removing cheesecake.
- Frosting:
- In a large bowl, mix vegetable shortening, butter and vanilla until creamy.
- Beat in marshmallow fluff and confectioners sugar until well combined (about 5 minutes).
- In a microwave safe bowl, melt the chocolate in the microwave. Stir at 30 second intervals - you want this melted but not hot.
- Pour the melted chocolate into the icing mixture and beat until well combined.
- Top the cake with frosting, mini marshmallows, broken graham cracker pieces and drizzle more melted chocolate over it.
- Store leftovers in refrigerator.
