Party Popcorn
  • ½ cup popcorn kernels (not popped)
  • 1 tablespoon coconut oil
  • ¾ cup white sugar
  • 2 tablespoons water
  • 2 teaspoons butter
  • food coloring
  • ½ teaspoon flavoured extract (optional)
  1. Begin by popping the popcorn kernels. Put the coconut oil into a large pot with 3 or 4 individual popcorn kernels. Cover with lid and slowly heat over medium heat until you hear these popcorn kernels pop.
  2. Once the 3-4 kernels pop, the oil is hot enough to pour in the remaining ½ cup of kernels. Cover again and heat until the kernels start popping, shaking the pot gently over the burner to prevent burning. Once you hear the popping almost come to a stop, the popcorn is ready and can be transferred to a bowl. Add salt, if desired.
  3. Combine the sugar, water, butter, food coloring and flavour extract in a small pot. Heat over medium heat, stirring frequently.
  4. Once the mixture comes to a soft boil, immediately remove from heat and pour slowly over the popped popcorn. Use a large spoon to mix and thoroughly coat all the popcorn kernels. Be careful, the sugar syrup will be extremely hot.
  5. Leave popcorn in bowl, or spread on a cookie sheet to thoroughly dry for 30 minutes. Once dry, stir gently to break up all the kernels. Serve and Enjoy!
