Ingredients
1 cup graham cracker crumbs
4 tablespoons unsalted butter, melted
½ cup plus 1 tablespoon granulated sugar
16 ounces (2 packages) cream cheese, room temperature
⅓ cup key lime juice (approximately 12 key limes)
1 tablespoon key lime zest
2 large eggs
2 cups white chocolate chips
optional - whipped cream and toasted coconut (easiest way to toast coconut is in a small frying pan over low-medium heat, stirring constantly because it burns quickly)
Instructions
Preheat oven to 325F.
Line a 9" square baking pan with parchment paper.
In a medium bowl, combine graham crackers, melted butter and 1 tablespoon granulated sugar.
Press graham cracker mixture into parchment paper lined pan. Press mixture down to pack it firmly. Bake for 10 minutes.
In a large bowl, beat together cream cheese, ½ cup granulated sugar, key lime juice and key lime zest just until well blended.
Add eggs, one at a time, beating well after each addition.
Stir in white chocolate chips.
Pour cheesecake mixture over baked crust.
Bake for 30-35 minutes.
Cool completely at room temperature then chill in refrigerator for at least 4 hours before serving.
Optional but recommended, serve bars topped with whipped cream and toasted coconut.
