Serves: 24

  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup unsifted all purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup graham cracker crumbs
  • 225g Baker's Semi-Sweet Chocolate squares
  • 1 jar marshmallow fluff (you'll find this in the ice cream toppings section of the grocery store)
  • 48 mini marshmallows
  • 6 graham crackers, broken into bite-sized pieces
  1. Cookie Cups:
  2. Cream butter and sugar until light and fluffy.
  3. Add egg and vanilla & beat well.
  4. In a separate bowl, combine flour, baking soda & salt.
  5. Blend the flour mixture into the creamed mixture.
  6. Stir in the graham cracker crumbs.
  7. Place cookie dough evenly into greased mini muffin tins. This recipe makes 24 mini cookie cups.
  8. Bake at 350 F for 8 – 10 minutes. Be careful not to over bake or they'll be really crunchy.
  9. Remove from oven and use a spoon to press in the middle of each cookie cup. Let them cool completely before removing from pan.
  10. In a small bowl, melt semi-sweet chocolate in microwave. Heat in 30 second intervals (stirring after each 30 seconds) and heat just until melted.
  11. Fill each cookie cup halfway with melted chocolate.
  12. Top each with marshmallow fluff. This is sticky to work with so keep a cold glass of water close so you can make this process a bit less messy.
  13. Top each with melted chocolate then place two mini marshmallows, 2 broken pieces of graham crackers and graham cracker crumbs on the top of each cookie cup. Let cool before serving.
