Greek Potato Salad
- 2 lbs unpeeled baby red potatoes
- 2 medium bell peppers, diced
- 2 medium tomatoes, seeded & diced
- 1 medium cucumber, diced
- ½ cup medium red onion, diced
- 1 cup crumbled feta cheese
- ½ cup Greek Salad Dressing
- In a large pot, boil potatoes just until softened. Remove from heat and allow to cool completely.
- Toss potatoes with remaining ingredients and serve immediately.
- Cover leftovers and refrigerate up to 24 hours.
