Southwest Chicken Pasta Salad
  • 375g box rotini pasta
  • 1 cup Astro® Original Balkan All-Natural Yogourt
  • ½ cup BBQ sauce
  • 3 cooked chicken breasts, cut into bite-sized pieces
  • 340ml can corn niblets, rinsed and drained
  • 540ml can black beans, rinsed and drained
  • ¾ cup green onion, diced
  • 1½ cup shredded Black Diamond® cheddar cheese
  • crispy onions as a garnish
  1. Cook pasta until tender. Drain & rinse with cool water. Place pasta in large bowl.
  2. Add chicken, corn, black beans and green onions to pasta. Toss to mix well.
  3. In a medium-sized bowl, stir together yogourt and BBQ sauce until well mixed.
  4. Pour yogourt mixture over pasta salad and stir well to mix.
  5. Add shredded cheese and toss well until all pasta is coated in sauce.
  6. Serve in pasta bowls topped with crispy onions as a garnish.
  7. Store leftovers in airtight container in the refrigerator.
