Key Lime Cheesecake Tarts
  • Sugar Cookie Crust:
  • ½ cup unsalted Lactantia® butter, slightly melted
  • ⅓ cup sugar
  • 1 ¼ cups all-purpose flour
  • 2 tablespoons Lactantia® milk
  • Key Lime Cheesecake Filling:
  • ½ cup Astro® Original Balkan Style All-Natural Vanilla Yogourt
  • ½ cup Lactantia® cream cheese, softened
  • ¼ cup sugar
  • 1 egg, large
  • juice of 10 key limes (approximately ¼ cup)
  • 1 tablespoon all-purpose flour
  1. Sugar Cookie Crust:
  2. Preheat oven to 400°F.
  3. In a large bowl, beat together butter & sugar.
  4. Add flour and milk and beat until the mixture is slightly crumbled.
  5. Using hands, form sugar cookie crust into dough and press into 6 medium-sized tart baking cups.
  6. Bake for 10 minutes.
  7. Remove from oven and push down centers of tart shells to make room for the cheesecake filling.
  8. Key Lime Cheesecake Filling:
  9. Preheat oven to 325°F.
  10. In a medium bowl, beat cream cheese until smooth.
  11. Add all other ingredients and beat until smooth.
  12. Scoop filling evenly into 6 baked tart shells.
  13. Bake for 20-25 minutes until set (filling will no longer jiggle).
  14. Let cool on a cooling rack for one hour then place in fridge to chill for one hour before serving.
