Key Lime Cheesecake Tarts

- Sugar Cookie Crust:
- ½ cup unsalted Lactantia® butter, slightly melted
- ⅓ cup sugar
- 1 ¼ cups all-purpose flour
- 2 tablespoons Lactantia® milk
- Key Lime Cheesecake Filling:
- ½ cup Astro® Original Balkan Style All-Natural Vanilla Yogourt
- ½ cup Lactantia® cream cheese, softened
- ¼ cup sugar
- 1 egg, large
- juice of 10 key limes (approximately ¼ cup)
- 1 tablespoon all-purpose flour
- Sugar Cookie Crust:
- Preheat oven to 400°F.
- In a large bowl, beat together butter & sugar.
- Add flour and milk and beat until the mixture is slightly crumbled.
- Using hands, form sugar cookie crust into dough and press into 6 medium-sized tart baking cups.
- Bake for 10 minutes.
- Remove from oven and push down centers of tart shells to make room for the cheesecake filling.
- Key Lime Cheesecake Filling:
- Preheat oven to 325°F.
- In a medium bowl, beat cream cheese until smooth.
- Add all other ingredients and beat until smooth.
- Scoop filling evenly into 6 baked tart shells.
- Bake for 20-25 minutes until set (filling will no longer jiggle).
- Let cool on a cooling rack for one hour then place in fridge to chill for one hour before serving.
