Egg Stuffed Potato Skins
- 2 warm baked potatoes
- 4 eggs
- 4 tbsp sour cream
- 3 tbsp chopped chives
- ½ cup real bacon bits
- ½ cup shredded Monterey Jack cheese
- Preheat oven to 375°F
- Slice potatoes in half lengthwise; scoop out inside flesh of potatoes with spoon, being careful not to pierce skins.
- Combine potato flesh, eggs, sour cream, chives, cheese and bacon in medium bowl. Stir well to mix.
- Stuff potato skins with egg mixture.
- Bake in preheated 375°F oven about 20 minutes.
