Kentucky Scramble
This tastes just as great for leftovers the next day!
  • 1 tablespoon butter
  • 1 red pepper, coarsely chopped
  • 1 green pepper, coarsely chopped
  • ¼ cup onion, coarsely chopped
  • ¾ cup of whole kernel corn
  • 4 strips cooked bacon, chopped into bite-sized pieces
  • 125g regular cream cheese
  • 6 eggs
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  1. In a large frying pan, melt butter over medium heat.
  2. Add peppers and onions to frying pan and cook for a few minutes until vegetables have softened slightly.
  3. Add bacon, corn and cream cheese and stir well to mix.
  4. Continue cooking over medium-high heat until cream cheese has melted.
  5. In a medium bowl, whisk eggs, salt and pepper and then pour into frying pan.
  6. Cook on medium heat until eggs are set.
  7. Serve while hot.
  8. This dish goes great with baked breakfast potatoes.
