Lime Chicken Burritos

- 2 large chicken breasts, cut into bite-sized cubes
- 2 limes
- ½ cup salsa
- 1 green pepper, cut into thin slices
- 1 can corn niblets, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 cup fresh mushrooms, sliced
- 1 cup prepared rice
- 1 cup shredded cheese
- tortillas
- sour cream
- In a large frying pan, fry the chicken until fully cooked.
- Add green pepper, mushrooms, corn and black beans and cook over medium heat.
- Add the juice from two limes and stir well to mix.
- Add the salsa & rice and stir well to mix. Cook for about 5 minutes over medium heat.
- Spoon mixture into tortilla shells (not so full that you can't close them) and sprinkle with cheese.
- After I roll the burritos, I grill them for a few minutes in the panini press so that they hold their fillings better.
- Serve with sour cream.
