Chicken Chili
This chicken chili recipe freezes really well so make a big batch for quick & easy dinners!
  • 2 pounds ground chicken
  • 1 large can crushed tomatoes (around 800ml)
  • 3 tablespoons chili powder
  • 4 garlic cloves, minced
  • 1 can kidney beans (rinsed and drained)
  • 2 cups mushrooms, sliced
  • 1 green pepper, sliced into thin strips
  • 3 stalks of celery, diced
  • ½ onion, diced
  • Sour cream, diced green onions and shredded cheese to garnish
  1. In a frying pan, cook chicken thoroughly (until browned).
  2. In a large pot, add crushed tomatoes, chili powder, garlic, beans, celery, mushrooms, green pepper and onion and stir well to mix.
  3. Set on stove top over low-medium heat.
  4. Add cooked ground chicken and simmer for 1 hour (with the lid on the pot).
  5. Serve with sour cream, green onions and shredded cheese on top. Don’t forget the garlic bread for dipping!
