Apple Cinnamon Pancakes with Caramel Syrup

  • 1½ cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 tablespoon white sugar
  • 1¼ cups milk
  • 1 egg
  • 3 tablespoons unsalted butter, melted
  • 1 apple, cut into small chunks
  • Caramel syrup:
  • ½ cup brown sugar
  • ½ cup heavy cream
  • ½ cup syrup
  1. In a large bowl, mix all the dry ingredients together.
  2. Add in milk, egg and butter and stir well until no longer lumpy.
  3. Stir in apple.
  4. Heat (medium heat) a frying pan on the stove and spray with non-stick cooking spray.
  5. Add pancake batter for however big you'd like each pancake to be. Press on the middle of each while cooking to make sure you cook the middle as well. Cook each until browned well on both sides.
  6. For syrup:
  7. In a medium-sized pot, bring brown sugar, cream and syrup to a boil over high heat while stirring constantly.
  8. Simmer over low-medium heat for about 5 minutes.
  9. Remove from heat - sauce thickens as it cools but you can serve it warm.
