Peanut Butter and Chocolate Pizza Cookies
Delicious cookies that are far from traditional.
  • 1 cup of butter (or margarine)
  • 1 cups granulated sugar (extra sugar for rolling dough balls)
  • 1 cup brown sugar
  • 1 cup creamy peanut butter
  • 2 eggs
  • 1 tsp baking soda
  • 1 tsp vanilla
  • ½ tsp salt
  • 2 cups all-purpose flour
  • 2 cups quick rolled oats
  • Sauce:
  • 2 cups milk chocolate chips
  • ¼ cup butter (or margarine) - this keeps the chocolate a bit softer and easier to eat
  • Pizza toppings:
  • Nuts, candies, sprinkles, marshmallows, dried fruits, etc.
  • “Cheese”:
  • 1 cup white candy coating (can be found at Michaels)
  1. Preheat oven to 350F.
  2. Cream butter, sugar and brown sugar in large bowl until well mixed.
  3. Mix in peanut butter, eggs, baking soda, vanilla and salt and stir until well blended.
  4. Fold in oats and flour.
  5. Measure out ~1/4 cup dough and shape into balls.
  6. Roll each ball in sugar and place 4 inches apart on cookie sheets (do not grease).
  7. Flatten balls into ~4 inch circles.
  8. Bake cookies for 8-10 minutes, being careful not to overcook.
  9. Once you remove from the oven, use a cup or a spoon to flatten the center of each cookie to form a crust like edge. Let cookies cool.
  10. Once your cookies are cool, you are ready to decorate.
  11. For the ‘sauce’, combine chocolate and butter in a bowl and heat over a double boiler until melted and smooth (or place in microwave and heat at short intervals, mixing in between until mixture is smooth and shiny).
  12. Spoon ~2 tsp chocolate onto each cookie and spread to inside edge.
  13. Top with whatever ‘pizza’ toppings you desire and let cool.
  14. For the cheese, follow similar steps to melt the wafers.
  15. Place melted coating into ziploc bag (or piping bag if you have them).
  16. Cut a hole in the corner of bag.
  17. Squeeze while drizzling the cookies in a random fashion.
  18. Let cool and harden, then serve.
