Chocolate Macaroon Cheesecake Parfait

Be sure to fill up your bowl first because once your guests get their hands on it there won't be much to share! This recipe makes 4 large parfaits.
  • Ruffles Chocolate Macaroons
  • 1 250ml carton of whipping cream (35%)
  • 1 250g package of cream cheese (room temperature)
  • ⅔ cup sugar
  • 1 tsp vanilla
  1. Crush 2 Ruffles in the bottom of each serving dish (bowl, martini glass, etc.).
  2. Using beaters, whip the whipping cream until soft peaks form. Put aside.
  3. In a separate bowl, beat cream cheese, sugar and vanilla until well mixed and smooth.
  4. Fold the whipped cream into the cream cheese mixture.
  5. Using an icing tool, swirl the cheesecake mixture into the serving dishes.
  6. Top with 1-2 crushed Ruffles on each parfait.
