Brownie Cupcakes
- 1 cup of semisweet chocolate chips
- 1 cup unsalted butter
- 2 cups brown sugar (packed firmly)
- 4 large eggs
- 2 teaspoons vanilla
- 1 cup flour
- Preheat oven to 350 F. Lightly spray muffin tins or use paper liners (will make 18 cupcakes).
- Melt chocolate and butter together in microwave. Stir until mixed well.
- Stir in brown sugar until mixed well.
- Stir in eggs one at a time.
- Stir in vanilla.
- Stir in flour and mix until well combined.
- Pour into muffin tins and bake for 25 minutes.
- Cool completely before icing & decorating.
